Recipe – BBQ Lamb Kebabs

BBQ Lamb Kebabs with Tzatziki

Since summer seems to have arrived I thought it was time for another BBQ recipe.  This is one is made with chunks of lamb which I cut up from a half leg of lamb.  This accompanied with Tzatziki served on pitta bread makes a wonderful BBQ dinner.

Serves 4

Lamb kebabs

Ingredients

300g lamb cubed (use leg of lamb or neck fillet)

2 tsp ground cumin

2 cloves crushed garlic

1 lemon zested

4 tbsp Greek yogurt

4 Flatbreads

Method

  1. Mix the ground cumin, garlic, lemon zest and yogurt in a bowl
  2. Add the lamb and mix well
  3. Put in fridge to marinate for at least 30 minutes but preferably overnight
  4. Take out of the fridge and bring up to room temperature, then put on skewers
  5. Heat the BBQ and cook the lamb to your liking – should take around 4 minutes on each side
  6. When ready, wrap in foil and rest for a few minutes
  7. While lamb is resting grill the flatbread on both sides – be careful not to burn!

Tzatziki

Ingredients

½ cucumber, halved and deseeded

170g pot of Greek yogurt

Clove of garlic crushed                                                                                       

Handful of fresh mint leaves chopped

Method

  1. Coursely grate the cucumber, place in a sieve, sprinkle with a pinch of salt and squeeze out the liquid
  2. Place into a bowl with the remaining ingredients and mix well
