Amazing Cheese scones
For many year’s I tried to make nice fluffy scones and they never seemed as good as the ones my nana used to make, then I tried this recipe. It is very straight forward and the beauty of them is that they can be frozen (uncooked) and brought out, defrosted and ready to cook for any unexpected guests. You can use any cheese you wish. Today I am going to use a strong cheddar. In my view these are best served straight from the oven with lashings of butter!
Makes 12
Ingredients
450g strong white flour
5 teaspoons baking powder
Pinch of salt
100g diced cold butter
300ml milk
150g grated cheese
2 eggs (one for egg wash)
Sprig of Thyme
Method
- Preheat oven to 220 degrees
- Mix the flour, salt and baking powder.
- Add the butter and rub it into the flour with your fingertips until it resembles fine crumbs
- Add milk, egg, cheese and thyme until you have a smooth dough
- Roll out on a lightly floured surface to around 2cm thick
- Cut using a 7cm cutter. Re-roll to use up all the dough
- Beat the second egg and brush over the top (at this point you can place on greaseproof paper if you wish to freeze)
- Grease a baking sheet, place scones on and bake for around 10-12 minutes until golden
- Allow to cool slightly and enjoy!
