Chewy Chocolate Chip Cookies

A fantastic cookie to cook in the lead up to Christmas because you can keep the dough in the fridge for a couple of days and bring out just when you need it.  This also means that you can have warm cookies served straight from the oven!  Nothing tastes better! Equally they will keep in an airtight container for up to three days.

Ingredients

150g softened butter

150g soft brown sugar

1 egg

1 tsp vanilla extract

190g plain flour

½ tsp baking powder

½ tsp salt

200g chocolate chips – you can use what you like – milk, plain, white

Method

  1. Mix the butter and sugar together in a bowl using an electric whisk until light and fluffy, then beat in the egg and vanilla
  2. Quickly fold in the flour, baking powder, chocolate and ½ tsp salt
  3. For best results then cover the bowl and chill overnight
  4. Meanwhile heat the oven to 180C degrees and line a baking sheet with parchment paper
  5. Divide the mixture into small balls, then flatten slightly and space out on baking sheet – leave plenty room as they will spread
  6. Bake for approx. 12 minutes until browned and a little crispy at the edges, but still soft in the middle – they will harden a little as they cool.  Leave on the tray for a few minutes to cool before transferring to a wire wrack
