I got this recipe from a New Zealand friend and it is a real crowd pleaser. As with many of my recipes you can adapt it to suit your taste, for example when I made this recently I added in some olives. It freezes very well which is great as it makes two loaves. Also if you have any left, it is delicious toasted with butter on or made into sandwiches. I quite often make it as part of a BBQ dinner.
Makes 2 1lb loaf tins
Ingredients
1 tbsp sugar
2 eggs (one to glaze)
2 tsp salt
1 tsp black pepper
100g melted butter
2 cups milk
½ tsp baking soda mixed with 2 tbsp hot milk
1 red pepper finely diced
1 tbsp minced jalapenos
4 cups self-raising flour
1 cup polenta
2 cups tasty grated cheese (I use gruyere)
Method
- Preheat oven to 200 degrees. Grease and line 2 loaf tins
- Beat together sugar, egg, salt and pepper
- Mix in butter, milk and soda paste
- Add red pepper, chillies, flour, polenta and cheese and mix well
- Spoon into the two lined loaf tins and brush with a beaten egg
- Bake for 30-35 minutes or until a skewer inserted into the middle comes out clean
- Cool in the tins before tipping out
