Recipe – Banana Bread

Banana bread

This week we continue with the theme of using everything up in the cupboard!  This is a very old recipe of my mum’s and has even been in my old handwritten recipe book (remember them?!) for over 30 years.  The beauty of it is that it uses up old bananas (the ones you are about to throw out) and it can all be mixed up in the one bowl!  It also makes 2!  It is an American recipe therefore the measurements are in cups so no need to weigh anything.

Ingredients

½ cup sunflower oil

Cup of sugar

2 eggs (beaten)

3 bananas (mashed with a fork)

2 cups plain flour

1 tsp baking soda

½ tsp baking powder

½ tsp salt

½ tsp vanilla extract

3 tbs milk

Method

  1. Grease and line the bottom of two 19cmx10cm loaf tins
  2. Heat the oven to 180 degrees
  3. Beat the oil, sugar and eggs together with a hand held mixer
  4. Add the mashed bananas to the mixture
  5. Sift the flour, baking soda, baking powder and salt together and then beat it into the banana mixture
  6. Finally stir in the vanilla and milk
  7. Pour into the baking tins and bake in the over for around 40 mins
  8. Before removing from the over, put a skewer in the centre and if it comes out clean your loaves are ready!
  9. Remove from the over and place on a wire tray to cool…….mine tend not to get the chance to cool!

Karen’s tip – if you want to add some sultanas for additional flavour you can.  This loaf is delicious with a little cream cheese spread on top
