This has got to be the best authentic curry I have ever made. I got the recipe from a fellow MasterChef contestant whose grandma in India had given it to him. It does take a little more effort but believe me, it’s worth it. The following quantities only make 3 servings so I would recommend you double it up.
Ingredients
700g diced lamb
½ cup plain yogurt
1 tbsp. anchovy paste
1 star anise
1 stick cinnamon
2 cloves
10 black peppercorns
2 cups red wine
2 red peppers
3 tbsps olive oil
1 tbsp. balsamic vinegar
1 cup veg stock
1 tbsp honey
Wet spice ingredients
2 medium onions
5 cloves garlic
1 Tbsp. curry powder
2 tsp Turmeric
2 sprigs Rosemary
2 tbsps. chopped Mint
1 tsp Paprika
1 red chill
