Back to the BBQ this week! I am always looking for something a little different to cook on the grill and this is a great recipe – easy to make and importantly can be made in advance and left marinating in the fridge until ready to use. I’ve married this up with this lovely colourful salad that contains a multitude of fruit and vegetables, this accompanied with the dressing is truly delicious.
Serves 4
Mustard glazed Lamb cutlets
Ingredients
8 Lamb cutlets
2 tbsp mustard (Dijon or English)
3 tbsp demerara sugar
Salt & pepper
Method
- Dry the cutlets with paper towel, then season with S&P
- Spread each side with mustard
- Dip in sugar
- Place on BBQ or grill for approximately 5 mins each side
Super summer salad
Ingredients
8 lettuce leaves of your choice
Large handful of baby spinach
250g tomatoes cut into quarters
¼ cucumber, halved lengthways, deseeded and sliced into small pieces
1 mango peeled and chopped into chunks
½ red onion finely sliced
6 red radishes thinly sliced
1 avocado peeled and slices
8 strawberries halved
100g feta cheese crumbled
