Moroccan Lamb

A number of weeks ago I appeared on MasterChef as one of the 2020 contestants.  I have always loved cooking so this was a dream come true.  What I would now like to do is share some recipes which were inspired by my MasterChef experience.  My recipes use every day ingredients made into something nutritious and delicious!  Everyone can cook, so let’s cook together. 

Serves 4

Ingredients

2 tsp olive oil

2 cloves garlic

750 g lamb pieces

25 g toasted almonds

25 g flaked almonds

Cinnamon Stick

1 tsp honey

175g dried apricots

1 pint of lamb stock

3 tbs chopped fresh mint

Juice of one orange

  1. Start by heating the oven to 180 degrees
  2. In a non-stick oven proof casserole heat 1 tbs oil and fry the lamb  until brown – remove from pan and set aside
  3. In the same casserole, heat 1 tbs oil and fry the onions and garlic for 5 mins. Return lamb to the pan and add stock, orange juice, cinnamon, honey and salt & pepper
  4. Place in oven and cook for 1 hour
  5. Remove from oven and add apricots, 2  tbs mint with the ground almonds to thicken – check seasoning
  6. Serve with remaining tbs of mint and toasted almonds

Karen’s tips – I generally serve this with couscous but it is equally good with rice
