Mum’s Meatloaf

Hi – welcome to ‘Karen loves cooking’.  Since a very early age I have been passionate about cooking and one of the best things is sharing my recipes or indeed cooking for family and friends.  In recent years I have had the time to experiment with different recipes and ingredients so much so I had the hair brained idea of entering MasterChef.  It was an ambitious challenge, but I did make it and am the proud owner of a MasterChef apron!

In recent years I have been writing for a number of newspapers around Scotland, giving me the opportunity to share more of my ideas and inspiration, and would now like to expand this into the area where I live.  An area where I have access to some wonderful Scottish produce.

One recipe I’d like to share with you on my new website is one from my late mum who was the person who gave me my passion for cooking and has left me with many happy memories of time spent in the kitchen together.  I have possession of many of her handwritten recipes which I will be sharing with you over the coming months.   For this week, let’s start with one of my all-time favourites.  The thing that everyone laughs about is the fact there is coffee in the gravy……but it works!

Ingredients

Meatloaf

  • 450 grams beef mince
  • 450 grams pork sausage meat
  • 1 cup breadcrumbs
  • 1 medium sized onion chopped
  • Egg beaten
  • ½ cup milk
  • Seasoning

For the Gravy

  • ½ cup of water
  • ½ cup tomato sauce
  • ¼ cup Worcestershire sauce
  • ½ cup brown sugar
  • 2 tsp lemon juice
  • 1 tsp instant coffee
  • Knob of butter

Method

  1. Heat the oven to 180 degrees
  2. Combine beef, sausage meat, breadcrumbs and chopped onion in a mixing bowl with seasoning
  3. Bind the ingredients together with the egg and milk
  4. Mould it into the shape of a loaf and put in a roasting tin
  5. Cook the loaf in the oven for 30 minutes without the gravy
  6. To make the gravy, combine all ingredients, apart from the butter in a pot, slowly bring to the boil and simmer for 10 minutes before adding the butter
  7. Pour over the meat loaf and cook for a further 45 minutes (I normally cover with tin foil for the first 30 minutes)
