As I go to Spain regularly I thought I’d share one of my favourite Spanish recipes. I love to try this tapas dish in various different restaurants. It’s basically small cubed potatoes with a lovely tomato based sauce which you can make as spicy as you like. As home you could have it as a side with many dishes.
Ingredients
4 tbsp olive oil
1 small onion chopped
2 cloves garlic chopped
227g can chopped tomatoes
1 tbsp tomato puree
2 tsp sweet paprika
1 tsp sugar
1 tsp salt
1 tsp chilli powder
900 g potatoes cubed
Chopped parsley to garnish
Method
- Heat the oven to 200g
- Heat 3 tbsp of the oil in a pan and fry the onion until it softens
- Add garlic, tomatoes, puree, sweet paprika, chilli powder, sugar , tsp salt and bring to the boil stirring occasionally
- Simmer for around 15 minutes
- Pat the potatoes dry with kitchen roll, then tip into a roasting tray with 1 tbsp oil and season
- Roast for around 40 minutes until golden
- Tip potatoes into a serving dish, spoon over the tomato sauce and garnish with parley
