Sausage and Apple one-pot casserole

This is an old family recipe that my nana used to make.  I just remembered about it the other day when I was trying to think up a quick supper.  Unfortunately I couldn’t find the original recipe so I made it up and noted down the ingredients – it turned out just as I remembered it!  I’m not sure nana piped the potato on the top but as I am practicing my piping skills I thought it would make it look extra special.

Serves 4

Ingredients

500g pork sausage meat

1 onion chopped

4 apples peeled and chopped

Small tin chopped tomatoes

2 large potatoes peeled and chopped

Large spoon of butter

100ml milk

100 g grated parmesan cheese

Method

  1. Butter a casserole dish – 16x16x7cm  (approximate size, but it does need to be deep)
  2. Put apples in a small pot and simmer over a low heat until they are stewed – put aside
  3. Mix the chopped onion through the sausage meat with your hands
  4. Boil the potatoes in salted water, when they are cooked through, drain and mash with butter and milk (you may need more milk depending on the size of potato) – put aside
  5. Start to assemble the casserole by putting the apples in the bottom of the casserole, followed by the sausage meat, tinned tomatoes and finally the mashed potato (you can pipe if you wish, but not necessary)
  6. Sprinkle with parmesan cheese and bake in the oven for around 30 minutes until the potato starts to turn golden.
