In anticipation of summer coming, I have started to look out some of my favourite BBQ recipes. This must be one of the most versatile ones I have, as you can multiply the quantities depending on how many you are inviting. You can equally vary the contents depending on taste, but I have to say this is one of my favourite one. If you don’t have a BBQ you can do indoors on a griddle pan……but the outdoors flavour is the best.
Serves 2
Ingredients
2 large flour tortillas
6 slices of Parma ham
6 slices of gruyere cheese (use cheddar if you prefer)
6 fresh basil leaves (only use fresh)
6 green Jalapeno peppers – chopped or whole
Sour cream to serve
Olive oil to drizzle over the outside of the tortilla
Method
- Heat your BBQ griddle to medium heat
- Lay out one tortilla flat and fill one side with 3 slices ham, 3 gruyere cheese, 3 basil leaves, and 3 jalapeno peppers
- Fold the tortilla in two
- Rub oil over both halves of the tortilla
- Repeat with the second one (or however many you are making)
- Place both on BBQ griddle plate to brown on both sides
- Take off the heat and cut each one into 3 triangles
- Serve with spoon of sour cream
Karen’s tip – these can be made a few hours in advance – just pile them up and cover in cling film and put in the fridge. Take out an hour before using to bring up to room temperature.
Vary the filling with – left over chicken, tuna, sweetcorn, tomatoes, chorizo, to name but a few alternatives.
