This is a fantastic recipe to have as a brunch. The brilliant thing with this recipe is that it is a great way to use up leftovers in your fridge. This is my basic recipe but you can add in whatever you want – potatoes, tomatoes, peas, basically whatever you have to hand. Also, a great addition to any picnic.
Serves 6
Ingredients
4 rashers of bacon
100g spinach
6 large eggs
150 ml double cream
175g grated gruyere cheese (or use a strong cheddar)
Salt & pepper
Method
- You will need an oblong tin (20×30 cms) well-greased with butter and greaseproof paper on the bottom. Heat the oven to 180 degrees/160 degrees fan assisted
- Heat a frying pan over a high heat and fry the bacon until crisp. Remove from the pan and set aside then add the spinach and fry until wilted. Drain and cut bacon and spinach into pieces
- Beat the eggs and cream in a bowl, add the bacon, spinach and cheese, season well and pour into the prepared tin
- Bake in the oven for approx. 30 minutes until the edges begin to brown and the centre is slightly wobbly
- Leave to cool slightly then serve. Or put into your picnic boxes!
