Stuffed Mushrooms

This week’s recipe is a favourite of mine which I created for myself many years ago.  It can be made either as a starter or as a snack for lunch.  Very simple to make but delicious.

Serves 2 as a snack

Oven 180 degrees

Ingredients

6 medium sized mushrooms

1 small onion or shallot chopped

2 slices of bacon cut into small pieces

1 crushed clove of garlic

125 g full fat cream cheese

Knob of butter for frying

1tsp tarragon

½ Cup of breadcrumbs

Parsley (optional)

Method

  1. Take the stalks off the mushrooms and chop into small pieces
  2. Melt the butter in a frying pan
  3. Add the onion and gently fry for 2 mins before adding the garlic, mushroom stalks and bacon. 
  4. Continue frying for around 5 mins until the bacon is cooked and the mushrooms stalks have softened.  Leave to cool
  5. Put the cream cheese in a bowl and add the ingredients from the frying pan
  6. Add 1 tsp of tarragon to the cream cheese mixture and season well
  7. Stuff the mushrooms with the cream cheese mixture
  8. Sprinkle breadcrumbs on top and place in the oven for approximately 15 minutes – keeping an eye on the breadcrumbs to ensure they do not burn
  9. Serve immediately with sprig of parsley (optional)
