This week’s recipe is a favourite of mine which I created for myself many years ago. It can be made either as a starter or as a snack for lunch. Very simple to make but delicious.
Serves 2 as a snack
Oven 180 degrees
Ingredients
6 medium sized mushrooms
1 small onion or shallot chopped
2 slices of bacon cut into small pieces
1 crushed clove of garlic
125 g full fat cream cheese
Knob of butter for frying
1tsp tarragon
½ Cup of breadcrumbs
Parsley (optional)
Method
- Take the stalks off the mushrooms and chop into small pieces
- Melt the butter in a frying pan
- Add the onion and gently fry for 2 mins before adding the garlic, mushroom stalks and bacon.
- Continue frying for around 5 mins until the bacon is cooked and the mushrooms stalks have softened. Leave to cool
- Put the cream cheese in a bowl and add the ingredients from the frying pan
- Add 1 tsp of tarragon to the cream cheese mixture and season well
- Stuff the mushrooms with the cream cheese mixture
- Sprinkle breadcrumbs on top and place in the oven for approximately 15 minutes – keeping an eye on the breadcrumbs to ensure they do not burn
- Serve immediately with sprig of parsley (optional)
