This is a fabulous recipe to have for lunch or as a starter at a BBQ. I think the addition of the pear adds an element of surprise to the dish and goes superbly with the blue cheese.
Ingredients
1 tbsp. olive oil
30g butter
300g chestnut mushrooms sliced
8 small wholemeal wraps
80g blue cheese, crumbed
120g mozzarella grated
120g cheddar, grated
8 sliced jalapenos finely chopped from a jar
1 pear, finely sliced
Olive oil to brush

Method
- Heat the olive oil and butter in a pan on the BBQ or stove. When hot, add the mushrooms and season well. Cook until they have softened.
- Take the pan off the heat and allow to cool slightly
- Lay the wrap flat and fill half of it equally with the cheeses, pear, mushrooms, pear and jalapenos
- Close over the other half to make a half moon shape
- Lightly brush with olive oil and place on the BBQ (or you could use a griddle pan)
- When the first side is cooked, turn and brown the other half
- Place on a chopping board and cut each one into 3 triangles
