This is a great recipe which my bestie Liz gave me recently when cooking for our mums during lockdown. When it comes to my cooking my mum is my greatest fan, but also my greatest critique! She ‘commented’ that my gingerbread needed more spice. Since a mum is usually right I have added some grated fresh ginger which I love in any food – sweet or savoury. I think it just gives the loaf an extra lift. The great thing about this recipe is that it is cooked all in one pot……..remember not to hold back on butter when serving!
Ingredients
2 cups SR flour
½ cup sugar
30g butter
2 tbs treacle
1 tbs golden syrup
1 tsp baking soda
1 tsp all spice
1 tsp ginger
2 tsp freshly grated ginger
1 egg (beaten)
1 cup of milk
Method
- Heat oven to 180 degrees and butter and line a 1lb loaf tin
- Melt the butter, milk, treacle and syrup in a large pot
- Add a little water to the baking soda, then stir into the pot mixture and mix well
- Now add all the dry ingredients into the pot, stir well and add the beaten egg
- Finally stir in the grated ginger
- Put the mixture into the loaf tin and bake in the oven for approximately 45 minutes

If you cannot get Self- raising flour, simply add 2 tsps of Baking Powder to each 150g/cup of plain flour
