Crunchy Lamb Burgers with Asian Potatoes

This week with the lovely weather I thought we should head back to the BBQ.  The key thing with Burgers is not to make it to complicated, with a few ingredients you can make the tastiest burgers.  The Asian Potatoes go very well with the Burges – adding a bit of spice to the dish.

Crunchy Lamb Burgers

Ingredients

1 shallot finely chopped

2 cloves crushed garlic

500g minced lamb

2 tbsp. chopped mint

100g feta chopped into small pieces

Salt & pepper

2 tbsp. seasoned flour

1 beaten egg

1 large floury potato

Method

  1. Combine the shallot, garlic with the minced lamb, then add the mint, feta and season well.
  2. Shape the mixture into 8 balls and flatten slightly into burgers.
  3. Cover each in the seasoned flour, roll in the egg.
  4. Coarsely grate the potato, then dry in a tea towel or kitchen paper.
  5. Roll the burgers in the potato.
  6. Place on a moderate BBQ and grill on both sides until golden brown.

Asia Potatoes

Ingredients

2 tbsp. soy sauce

2 tbsp. toasted sesame seeds

1 clove crushed garlic

2 spring onions finely chopped

2 tbsp. salted butter

4 medium potatoes

Salt and pepper

Method

  1. Mix soya sauce, sesame seeds, garlic and spring onions in a bowl.
  2. Cut 4 pieces of tin foil into squares of approximately 30cms x 30 cms.
  3. Smear a quarter of the butter in the middle of each piece of foil.
  4. Cut each potato into 4 slices.
  5. Place one slice of the first potato on the butter. Season and put a little of the soya mixture on top, season and repeat with remaining slices until you have stacked all 4 slices.
  6. Repeat with the remaining pototes.
  7. Wrap the foil round the potato and place on the BBQ (or oven) until the potato is fully cooked – should take around 1 hour.
