Curried Chicken Salad

This week I am writing my recipe from my patio in Spain – so it has to be salad.  If you read my page regularly you will know I love salad, but not if you have to hunt for the ‘goodies’ in amongst the lettuce leaves!  This recipe fits the bill, it’s from my late mum who loved when I prepared salads for her out here.   This week I made it for my dear friends (and new neighbours) who joined me for a patio lunch yesterday.

Ingredients

2 whole chicken breasts (cooked)

1 tsp curry powder

1 tbsp. Lemon juice

1 cup diced melon

1 cup seedless grapes (whole or halved)

½ cup pecan nuts chopped

1 tsp grated fresh ginger

¼ cup crème fraiche

½ cup mayonnaise

Seasoning

Chicory leaves or little gem lettuce leaves to serve (optional)

Method

  1. Cut the chicken into cubes, then toss with the curry powder and chill until cold
  2. When the chicken is chilled combine with the melon, grapes, pecans, ginger, crème fraiche, mayonnaise and lemon juice
  3. Season the mixture
  4. Chill until ready to serve
