This week I have a lovely vegetarian option which can either be cooked on the BBQ or on a griddle plate inside – so very versatile depending on the weather. It is a great starter and the combination of the coriander, capers and lime is absolutely delicious. It’s one of my favourite starters as it’s easy, can mostly be prepared ahead and looks quite impressive!
Ingredients
Block of Halloumi cheese
2 tsp well-seasoned four
Olive oil
Dressing
1 lime Juice and zest
1 heaped tbsp. capers
1 clove garlic finely chopped
1 tbsp. grain mustard
1 tbsp. chopped coriander
2 tbsp. virgin oil
Sprigs of coriander for garnish
- Unwrap the Halloumi and pat it dry with kitchen roll, then slice it into 8 pieces
- Dip each slice into the seasoned flour, covering both sides of the cheese
- For the dressing, simply whisk all ingredients in a bowl and set aside
- Heat your BBQ or griddle to a medium heat, cover with a little olive oil and pan fry/BBQ each piece of cheese for around 1 minute on either side until golden brown
- Serve immediately on warmed plates and spoon over the dressing
- Add a few coriander sprigs for garnish (optional)
