I love a good salad, but not if you have to hunt for the goodies in amongst the lettuce! This salad actually doesn’t have lettuce, just healthy goodies. A great accompaniment to some of my BBQ recipes!
Ingredients
200g trimmed green beans
2 ripe nectarines
½ cucumber halved length ways, deseeded and chopped into pieces
½ red onion very thinly sliced
1 avocado halved, peeled and sliced
100g good quality feta cheese
Small bunch mint chopped
Small bunch coriander chopped
Dressing
Juice of one lemon
1 tbsp white wine vinegar
1 tbsp sugar
2 tbsp olive oil
1 tbsp grain mustard
Method
- Make the dressing by combining all ingredients in a jar and give a good shake and set aside
- Bring a saucepan of water to boil. Add the beans, boil for 3 minutes then drain and run under cold water and pat dry
- Slice the nectarines and gently griddle on the BBQ (if you do not have a BBQ you can just serve sliced)
- Place the beans, cucumber, red onion, avocado and herbs into a salad bowl
- Sprinkle over the feta cheese
- Dress and toss the salad with the dressing
